Ingredients:

Onions

1 cup

Butter

2 tbsp.

Chicken (shredded)

3 cups

Chorizo

8 oz.

Coriander

½ tsp.

Ground Cumin

½ tsp.

Garlic Powder

½ tsp.

Chipotle Powder

½ tsp.

Cheddar Cheese

1 cup

Instructions:

Melt the butter in a pan and add in the onions, salt, and pepper. Cook the onions over a medium flame until they turn golden brown. This usually takes about seven minutes.

Add the chorizo to the pan and cook for another five minutes. Set the assembly aside and add in the shredded chicken.

Add in all the spices and mix thoroughly over low heat for three to five minutes.

In an ovenproof casserole dish, spread the chicken mixture and spread the chorizo evenly over this mixture. Sprinkle some cheddar cheese on top.

Bake the assembly in a preheated oven at 375 F for roughly ten minutes or until the cheese has thoroughly melted.
